Pear + Fennel Salad

Not all summer sides and appetizers need to be filled with carbs and loaded with mayonnaise. Our pear and radicchio salad is the embodiment of summer; this dish is packed with fresh produce, tart citrus flavors and plenty of crunch pulled together with simple do it yourself candied walnuts.
This dish makes for the perfect summer potluck salad or bbq accompaniment and if you’re looking for something a little more filling top it off with blackened prawns or a filet of seared salmon. Simple ingredients, quick preparation, no preservatives, full









  • 1 Head Radicchio

  • 1 Head Butter Lettuce 1 Pear

  • 1 Avocado

  • 1/2 Fennel

Candied Walnuts

  • 1/2 C. Walnuts

  • 1/4 C. Coconut Sugar 1 T. Maple Syrup

  • 1 T. Coconut Oil

  • 1/4 tsp. Salt


  • 3 T. Olive Oil

  • 1 T. Sherry Vinegar

  • 1 Small Shallot

  • 1 tsp. Maple Syrup

  • 1/2 tsp. Dijon Mustard Juice of half a lemon Salt + Pepper to taste



  1. Chop radicchio and butter lettuce. In a strainer toss together and wash under cold water. Pat dry with a paper towel.

  2. Remove the greens fron your fennel, halve the bulb and slice into thin strips. Toss with lettuce and radicchio mix.

  3. In a small pan over low heat melt coconut oil, add coconut sugar, salt and maple syrup. Once dissolved add walnuts and mix until they are fully coated in sugar mix. Remove from pan and cool.

  4. In a high speed blender combine all dressing ingredients and blend until smooth.

  5. Wash pear and julienne.

  6. Divide lettuce mixture into bowls, top with avocado, pears, candied walnuts and vinaigrette.

  7. Serve alone or add your favorite protein for a hearty meal!
